Everything is great, the sausages are delicious as well as the rib fingers - and the Iberico Belly Rib is superb. I didn't rate it excellent due to the disappointing "Swift Premium USA Belly Ribs," which I assume you can't do much about. Unfortunately, it was still full of cartilage along the entire length. So this wasn't really worthy of a "Competition Cut."
